I am all for healthy food and eating fish is part of my healthy eating routine.

However, like many other people, not infrequently do I get kind of disgusted by its odor.

These amines are produced by bacteria present on the surface of the fish or within its body, as well as by enzymes that break down amino acids in the fish's flesh.

When fish begins to spoil or decompose, these bacteria and enzymes break down the fish's proteins into smaller compounds, including TMA, which gives off a strong, unpleasant odor. This process is accelerated by warm temperatures, which is why fish left out at room temperature can quickly develop a strong odor.
